Canada is suddenly a very attractive place to be-its safe. In truth, Montreal has been hot for some time, with its terrific film festival. The St Paul is a beaux arts building, which used to house Canadian Express. The muscular exterior remains, and the interior is inspired by the elements: earth, sky, fire and ice. The sky rooms are ethereal, the penthouse has cathedral-like ceilings and the earth rooms are, well, earthy and tactile. There are two-person baths in all 24 suites - how clean can you be? Stylish.

From the cobblestoned streets of the city's historic quarter, you step into the century-old St. Paul, now an ultra-hip boutique hotel thanks to a recent makeover The restaurant itself is a sanctuary of cream and bone, with picture windows providing glimpses of Old Montreal. The market-fresh, food is delicious: Start with the caramelized onion focaccia that aptly arrives in a wooden cube. Appetizers include the pan-seared foie gras with creamy polenta, roasted parsnip, and ice wine vinegar. The braised lamb shank with Japanese artichoke, risotto, and thyme is a tender tour de force.
